I beleive it may take a while to breed colors into spiny mice. from the info I've seen, it took gerbil breeders a while to get the colors we have today.
As for the other questions....I'm no good dealing with hamster genetics, never owned one. In fact, Ive never really liked them.

I have heard that Spiny Mice have slightly different colors, just variations in tone mostly. But there are some visible differences. I doubt if much will occur as there are not nearly as any people doing Spiny mice to that degree as there are gerbil breeders.
It will likely take years to breed gerbils to have variations in fur as fancy mice or Guinea Pigs have.
