This has happened to both of my beautiful Winter Whites. One of them, Tiddles, will not let me touch him anymore without letting off a terrible warning sound followed by a lunge at my hand. The other, Casper, is not as bad but will sometimes bite for no apparent reason.
I remember reading that Winter Whites do tend to get a bit grumpier in old age, is this true?
One explanation I can think of is that, when they were younger, they used to live together in a really nice cage. Soon after Tiddles began attacking Casper and as soon as I saw blood I had to split them. Tiddles is now in a smaller cage, perhaps this has something to do with it?

Hmmm. My aged Chinese hams always got more mellow! However, if they're hurting in any way, that may affect their behavior, making them more nippy/aggressive. Being picked up might be painful and something they want to avoid.

Perhaps. But whenever I do manage to pick him up, he is fine with it. Strange.

Our two Campbells hamsters did that. They were young when they fought and we separated them immediately, good for you for doing that.
Benny was fine when she got older, but Theo did nip a bit more. I'm guessing it was old age as she was almost two. That's all I can think that it could be, sorry if it's not that much help.

My Campbells Ham Ayla was an amazing hammy, then got 'grumpy' in her old age.
